Swaps settle from your own wallet against pool contracts, so nothing is custodied, but the interface geoblocks ten sanctioned jurisdictions and every trade is a permanent public transaction tied to your address. Fee depends entirely on which pool version and tier the router routes through, from 0.01% up to 1%.

v2 pools charge a flat 0.25%. v3 concentrated pools use tiers of 0.01%, 0.05%, 0.25% and 1%, with a wider set of intermediate tiers available to pool creators. Infinity (v4, launched April 2025) adds CLAMM and LBAMM pool types where a Dynamic Fee Hook raises the fee during volatility, so the fee you pay is not fixed. Your real cost is the tier of whichever pool the router picks plus price impact.
